The secret for the Cider House Cafe's pancakes is in the blueberries
Cider House Cafe Blueberry PancakesThe recipe will serve up to four people and depending on how big you make them, will yield between three and four pancakes per person.
Combine in a bowl:
2 cups of flour
2 tablespoons of sugar
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
2 cups of whole milk
3 tablespoons of melted butter
1 tablespoon of lemon juice
Pour batter for each cake on a hot griddle. Add blueberries to the top of each cake. Once bubbles start to form in the batter, flip the pancakes and cook them to a golden brown.
A Vermont native who has called North Haverhill home since 1961, Keith has been the breakfast chef at the Cider House Cafe at the Windy Ridge Orchard and Christmas Tree Farm for 10 of the cafe’s 11 years.
Keith likes the sweetness, but she prefers to work with a smaller variety of berry, which will be ripe in a couple weeks. Despite that temporary limitation, Keith said the bigger berries are just as delicious in the pancakes, which annually get admirers from as far away as Texas.
